The invention concerns a process and device for producing edible ice, in which ice-water is made to move past a cylindrical cooling surface (50) by a rotating mixer-scraper (12) which imparts a stirring and/or beating action and which strips the ice thus formed from the cooling surface. In order to optimize the ice quality, parts of the ice-water are subjected to a compressive force which presses them against the cooling surface (50) as they move past, this compressive action being maintained for several revolutions of the mixer-scraper (12), the ice thus formed being subsequently stripped from the cooling surface (50) again during the course of one or more revolutions and mixed with the rest of the ice-water, the compression and stripping taking place as separate, alternating steps.
