Positioning and securing onions to be cut - using receptacle with hollow recess and horizontal needles protruding inwards from all sides and square cutter

The onion is prepared by initially cutting off root and top sections (1) so that it sits flat in the recess (2). Needles (4) are located in all sides of the mould in a horizontal plane, and these can be pushed inwards to penetrate the onion and hold it firm. A four bladed cutter (5) arranged in the form of a square with both ends of each blade extending outwards, operates in a vertical plane in such a way that they just miss the points of the needles. The onion is cut through from top to bottom but the pieces are not separated until all further processing has been carried out. USE/ADVANTAGE - The onion is cut into regular predetermined pieces which remain together until further processing is complete.
