PROCESS FOR EXTRACTING PROTEIN CURCULIN

An aqueous acid solution is added to plant material containing curculin to thereby adjust the pH of the resulting mixture to 3 or below and then the curculin is extracted. Alternately, an aqueous acid solution is added to curculin-containing plant material and the resulting mixture treated under such conditions as to give a pH value of 1.8 to 4.0, followed by extraction of the curculin. Extraction is effected with the use of an aqueous solution of a salt of concentration 0.01 M or above.
