Production of calcium gluconate by microbiological method, which consists in bioconversion of fermentation substrate, which contains (NH4)2SO4, NH4OH, KH2PO4, MgSO4, 7H20, MnSO4, H3PO4 and which is earlier subject to sterilisation, and next vaccination with Aspergillus niger spores and, during bioconversion, gradual neutralization of generated gluconic acid with the use of CaCO3 or Ca(OH)2 characterised in that, in order to prepare the fermentation substrate, apart from inorganic components, starch hydrolysate with DE 5-98, preferably, 90-96 containing glucose, maltose, and oligosaccharides is used, and after the substrate sterilisation, in the temperature of 70 - 30 degrees C, enzymatic preparation containing glucoamylase in the amount of 0.005-0.04% with respect to the total substrate weight is added, and next, it is vaccinated with Aspergillus niger spores and the whole is subject to simultaneous saccharification and bioconversion, and gradual neutralization.
