PURPOSE:To prepare a food having the characteristic tastes, flavors and nutrients of buckwheat and bean curd refuse in improved yield owing to the use of bean curd refuse by adding buckwheat flour and bean curd refuse powder to a wheat flour skin product prepared from a kneaded mixture of wheat flour and water. CONSTITUTION:This product can be produced by adding buckwheat flour and bean curd refuse powder to a wheat flour skin product prepared by rolling and forming a kneaded mixture of wheat flour and water. Concretely, skin of giaoz (Chinese dumpling stuffed with minced pork) is prepared by adding 200g of buckwheat flour, 10g of bean curd refuse powder, 7.5g of salt and 162.5g of water to 290g of wheat flour, kneading the mixture, rolling the obtained dough to a thin sheet with a roll and punching the sheet in circular form. |
