PURPOSE:To provide the subject composition containing wheat flour and a specific amount of egg shell powder, etc., in batter mix, having a viscosity higher than a specific level and excellent adhesivity and useful for the preparation of croquette, etc., having crisp and short palatability without causing the puncture and the separation of the coating layer. CONSTITUTION:The composition contains wheat flour as a main raw material and further contains 5-20wt.% of egg shell powder and/or animal bone powder in a batter mix and has a viscosity of >=800cps. |
