PURPOSE:To efficiently improve the dispersibility of wheat flour in oil so as to be useful, e.g. for production of a roux by stirring raw wheat flour at a high speed and applying a shearing force to the wheat flour particles. CONSTITUTION:Raw wheat flour is subjected to a high-speed stirring, e.g. by rotating propeller-type or axial flow-type impellers at a high rotation number of >= several hundred times/min so as to apply a shearing force to the wheat flour particles. Thereby, the dispersibility of the wheat flour is improved. |
