PURPOSE:To prepare retort-cooked rice having improved taste and flavor. CONSTITUTION:A mixture consisting of rice and a necessary amount of water for cooking is mixed with glucose oxidase and glucose, sealed in a container, held in the state for a time necessary for the enzymatic reaction and retorted to perform the sterilization simultaneous with the cooking of rice and obtain the retort-cooked rice having improved taste and flavor. The deterioration of the taste and flavor can be suppressed and the generation of malodor caused by the oxidation of the component of rice grain, especially oil and fat components can surely be prevented. |
