PURPOSE:To provide a new gelling agent useful as a gelling component of a gel-state food, etc., and to provide the gel-state food containing the gelling agent. CONSTITUTION:A new gelling agent composed painly of apiin obtained by extracting and purifying parsley or an apiin-containing gelling material and an gel-state food containing this gelling agent. The purified gelling substance as the main component of the gelling agent is produced by extracting raw parsley with hot water, centrifuging the extract, extracting the resultant supernatant with butanol, evaporating the butanol layer to dryness, dissolving it in methanol and then purifying it by the chromatography. This agent is useful as a gelling agent for a gel-state food, etc., since the agent exhibits an excellent solubility in an alcoholic solution and a strong thermally reversible gel-forming property. |
