CONSTITUTION:The objective noodle resistant to limpening is prepared from wheat flour subjected to necessary oxidation by ozone treatment. The objective process for the preparation of the noodle resistant to limpening comprises the treatment of wheat flour with ozone to apply a necessary oxidation treatment to the flour and the preparation of noodles from the oxidized wheat. Another method for the preparation of the noodle resistant to limpening comprises the preparation of noodle from wheat flour subjected to necessary oxidation treatment with ozone, the boiling of the noodle by conventional method and the quick freezing of the boiled product.
