According to the method proposed, frozen blocks of giblets (pluck) at a temperature of the order of -20 DEG C are cut into the form of slices of thickness lying between 6 and 15 cm, the said slices are tempered by passing through a microwave tunnel until they arrive at an output temperature of the order of -5 to -9 DEG C, the said chips are reduced to the form of cubes. The device according to the invention comprises - a system for making slices (2), - a microwave oven tunnel (7), - a system (15) for cutting up into the form of chips and - a system (23) for cutting up into the form of tubes, a conveyor belt (4, 8, 12, 19) joining the various elements together. <IMAGE> |
