A baking oven has the temperature controlled by a unit (ST) that allows the transient response to be varied to suit requirements, ie rapid or slow rise of temperature. The oven can be a direct heating (2-4) type or a combined microwave type. The front panel (7) has temperature setting (8) and a cycle mode selector (9). A temperature sensor provides feedback. The regulator has memories providing offset values for the transient and steady state phase of the housing cycle. These are summed with the cycle mode signal (XSE).
