PURPOSE:To obtain an improving agent useful for noodles, gyoza (a dumpling stuffed with minced pork), etc., excellent in speck resistant effect, having no nasty smell, preventing a speck generation and mainly composed of tropolone. CONSTITUTION:The improving agent mainly composed of tropolone, preferably a cyclodextrin inclusion compound of tropolone (an amount to be added is preferably 1-500ppm tropolone unit to a grain powder material such as wheat flour). Thus, noodles having excellent quality can be obtained by adding the improving agent to a grain powder material and then making noodle. |
