PURPOSE:To obtain a method for producing bleached fish meat which does not require much time to dehydration in a bleaching process. CONSTITUTION:Citric acid and sodium hydrogen carbonate are used as a bleaching auxiliary in a bleaching process of a marine kneaded product. Thereby, water is not so much contained in picked fish meat, compared with a conventional method using only sodium hydrogen carbonate and time required for dehydration is reduced and efficiency is improved. |
