PURPOSE:To easily detach a kneading member from a cylinder constituting a mixer, to facilitate the cleaning of the mechanism in the apparatus and to improve the operability of the noodle-making machine. CONSTITUTION:A mixer 51 of a cereal flour kneading means 50 consisting of a cylinder 53 and a kneading member 52 rotatably and detachably inserted into the cylinder is rotatably supported on a shaft in a state pinched between a stationary supporting arm 56 of the main body 1 of the machine and a mobile supporting arm 59 placed opposite to the stationary supporting arm. Both ends of the kneading member are detachably attached to the rotary center shaft of rotors 62,66 placed on the stationary supporting arm and the mobile supporting arm. |
