<p>The purpose of the present application is a winemaking structure especially useful in the fermentation of red wines. Said wine maker, which comprises a tank for the fermentation of crushed products with vinasse discharge hopper, will further contain an axial threaded shaft on which can slide a sleeve on which can turn a perforated cover and which is integrated with a mechanical agitator. This winemaking design makes it possible to eliminate the formation of acetic acid or volatile acidities during the fermentation, enabling a mixing of the submerged vinasse for extraction of the desired colour. <IMAGE></p> |
