[Also in Division C3] An agglomeration of pectin and sugar exhibiting an increased pectin-solubility in water is made by milling pectin and dry sugar to a particle size less than 100 microns, treating the milled mixture with superheated steam to effect agglomeration and drying and separating a fraction of this agglomerate having a desired particle size, e.g. 0.2-1.0 mm. If desired tartaric, citric and/or ascorbic acid may be added initially and sugar of appropriate particle size added to the product. The product, which is stated to comprise porous particles, is useful in promoting gelation of sugar solutions. |
