<p>PURPOSE:To provide a new color-developing compound useful as a food dye having high safety. CONSTITUTION:The color-developing compound of formula I (R<1> is OH, lower alkyl or lower alkoxy; (m) is 0-4; (n) is 0-4; excluding the case of n=1, m=2 and R<1> is methoxy), e.g. 1,6-bis(4-acetoxy-3,5-dimethoxyphenyl-1,3,5-hexatriene. The compound of formula I wherein (n) is 0 can be produced by reacting a compound of formula II (R<2> is eliminable protecting group; Ph is phenyl; X is halogen) with a compound of formula III in the presence of a base such as NaOH at a temperature between -70 deg.C and the boiling point of the solvent and deprotecting the reaction product. The compound of formula I wherein (n) is 1-4 is obtained by reacting a compound of formula II with less than equimolar amount of a compound of formula IV ((n) is 1-4) in the presence of a base and deprotecting the reaction product.</p> |
