Forced variable direction circuit provided by transverse blowers working on to a combustion chamber arranged between them and ringed by a heat exchanger is fitted with atmosphere outlet and hand operated valve at a point where overpressure conditions are static throughout the baking run, regardless of flow direction. This allows moist atmosphere to be used at start of the run to crust the dough and improve its final appearance. |
