PURPOSE:To provide a rubusoside derivative better in sweetness. CONSTITUTION:The objective rubusoside derivative, a glycoside with sweetness, having such structure that beta-D-fructofuranosyl group is bonded at 2-site to the 6-site hydroxyl group of the beta-D-glucopyranosyl group ester-linked to the 19-site carboxyl group, and also a group [(alpha-D-glucopyranosyl-(1 4)]n (n is 1-5) is ether-linked to the 4-site hydroxyl group of the beta-D-glucopyranosyl group ether-linked to the 13-site hydroxyl group. |
