PURPOSE:To obtain the subject modifying agent exhibiting herbal or spicy fragrance, etc., having excellent durability and useful for foods, drinks, cosmetics, etc., by using a 2-alkylidene-3-methylthiopropanal compound as an active component. CONSTITUTION:The objective modifying agent is produced by using a compound of formula I (R is ethylidene, 2-methylpropylidene, 2-methylbutylidene or 3- methylbutylidene) as an active component and compounding the compound to bergamot oil, lemon oil, etc. The compound of formula I can be produced e.g. by the condensation reaction of the compound of formula II with a compound of the formula R-CHO (R is methyl, isopropyl, etc.) in the presence of an alkali. |
