<p>A method of preparing a fractionated polyol fatty acid polyester, whereby a polyol fatty acid polyester, obtained by esterifying a polyol with two or more fatty acids or derivatives thereof, is subjected to fractionation. Also the invention relates to a food product comprising from 1-100 % by weight of fatty substances, wherein from 50-100 % of the fatty substances are fractionated polyol fatty acid polyesters.</p> |
