PRODUCTION OF FRIED FOOD OF MEAT WITH BONE

PURPOSE:To obtain the subject food having good appearance and texture only by frying the frozen and stored product of a preliminarily treated meat for a short time because the bone marrow of the bone has been heated and coagulated, the preliminarily treated meat being produced by a method comprising coating the bone-containing meat with butter and subsequently heating the coated meat under a high humidity atmosphere. CONSTITUTION:A bone-containing meat such as chicken with a bone or port with a bone is preliminarily treated by coating the meat with butter and subsequently heated the coated meat under a high humidity atmosphere. The preliminary treatment is preferably performed by a steam oven heating method or by a steam heating method under a relative humidity of 60-100% at 70-110 deg.C for 10min.
