A coffee oil, intended to be brought into contact either with a frost consisting of carbon dioxide, water and coffee flavours, or with the residual aqueous phase laden with flavours which is obtained after sublimation of the carbon dioxide present in the frost, is filtered beforehand, the temperature of the oil being less than 30 DEG C during the filtration operation. By virtue of this filtration, the compounds responsible for the stability of the emulsion formed by the oil and the aqueous phase contained in the frost are eliminated. In this way, an easily decanted emulsion is obtained.
