PURPOSE:To obtain a mushroom flavor composition having improved palatability of natural mushroom of its own, by using a specific phenylpentane derivative as a flavor component. CONSTITUTION:A mushroom flavor composition containing about 0.01-100 wt.% at least one phenylpentane derivative selected from the group consisting of 1-phenyl-3-pentanone, 1-phenyl-3-pentanol, 1-phenyl-1-pentene-3-one and 1- hydroxy-1-phenyl-3-pentanone or a culture mixture of Basidomyces such as Mycoleptodonoides aitchisonii, Hydnum japonicum, etc., belonging to the family Hydnaceae containing the phenylpentane derivative, as a flavor component. |
