"Treatment of coffee oil" A coffee oil intended to be contacted either with a frost consisting of carbon dioxide, water and coffee aromas or with the residual aqueous phase charged with aromas obtained after sublimation of the carbon dioxide present in the frost is filtered beforehand, the temperature of the oil being below 30.degree.C during the filtration step. By virtue of this filtration step, the compounds responsible for the stability of the emulsion formed by the oil and the aqueous phase present in the frost are eliminated. An emulsion which decants easily is obtained in this way.
