A mayonnaise-type edible sauce containing no egg yolk and comprising 70-80 wt % of vegetable oil, 4-10 wt % of mustard, 1-15 wt % of egg white and 0.1-10 wt % of an emulsifying agent. A thickener, dextrose, water, seasoning or vinegar may also be added. This dietary, low-cost sauce has the same consistency, flavour and appearance as conventional mayonnaise, and has the advantage of being freezable. Given its composition, said sauce may be described as a "dietary substitute for conventional mayonnaise". |
