METHOD FOR THE PREPARATION OF POLYSACCHARIDES

This method finds application in medicine and in food, wine and tobacco industries making use of a by-product released from the dairy industry, rennet whey. The method involves using a lactoso-negative strain belonging to the Rhodotorula genus and synthesizing exopolysaccharides in association with a strain belonging to the Kluyveromyces genus, a producent of β-galactosidase which hydrolyses the lactose.
