<p>The process for simultaneously smoking and forming consists in arranging the cheese (2) to be smoked and to be formed on a tray (3), in impregnating it with the smoking smoke (5) at a temperature of between 15 and 45 DEG C for the time necessary for deformation by flowing of the mass of cheese through the openings in the tray (3), then in returning it to the preservation temperature once the smoking and the desired forming have been obtained. The smoked cheeses thus obtained (8, 9) may be used as raclette cheeses. <IMAGE></p> |
