PURPOSE: To automatically and accurately decide the evaluation based on the lean meat/fat content of alive animal or slaughtered body by moving an ultrasonic unit, measuring, storing and analyzing a reflection signal at a plurality of positions. CONSTITUTION: A fixing unit 20 is disposed so that an alive animal or slaughtered body (specimen) is near an ultrasonic transducer 36. When scanning is started, the transducer 36 is moved to a predetermined position. The transducer 36 oscillates an ultrasonic pulse to the specimen by A scanning, receives a reflection signal, and digitizes it by an ultrasonic data receiver 12. A computer 14 fetches the data, analyzes it, and detects a boundary layer between lean meat and fatty material. A controller 16 moves the transducer 36 along a bent member 46 so as to move from the end to the end of the specimen. Thereafter, the computer 14 calculates the area of the longest muscle or the thickness of a fat layer, and can obtain the grade of the specimen or the content of the lean meat by a predetermined formula by using the data. |
