PURPOSE:To prepare a bean curd ice cream having balanced nutrients, effective in assisting the intake of protein and calcium and suitable for infants, aged persons, etc., by sterilizing a material such as bean curd with heat, mixing yolk to the material, cooling the mixture, adding fresh cream and cooling and freezing the product. CONSTITUTION:A material containing bean curd and milk is thermally sterilized under stirring. Yolk is mixed into the obtained mixture and cooled. The product is mixed with fresh cream and an essence and frozen by cooling to obtain the objective bean curd ice cream. |
