PURPOSE:To produce a liquid sweetener containing sucrose, glucose, fructose, organic acid or inorganic acid salts, amino acids, etc., and having natural raw taste and flavor by pressing sugar cane, removing insoluble substances from the obtained juice and concentrating the product. CONSTITUTION:The top and the root part of a sugar cane are cut off and leaves are removed to obtain sugar cane stalk. The outer skin of the stalk is scraped off to a thickness of about 2 mm and the core part is cut with a cutter to a length of about 30 cm and squeezed with a press such as a three-roll mill to obtain squeezed juice. The juice is filtered to remove insoluble substances having a dimension of >=100mum (e.g. fibrous substance) and concentrated by reverse-osmosis membranes combined in multiple stages to obtain a concentrated sugar cane juice having a concentration of about 60%. The concentration of the juice is raised to 67% by adding crystalline granulated sugar to obtain the objective liquid sweetener containing glucose, fructose, inorganic or organic acid salts, amino acids, etc., as well as sucrose, having natural raw taste and flavor and widely usable for the improvement of the taste of various foods. |
