A method for removing sterols, especially cholesterol, from or enriching sterols in vegetable and animal fats is described and entails the sterol-containing fat being mixed with a hydrocarbon/alcohol/water mixture and subsequently the two phases which are formed being separated. The hydrocarbon-rich phase essentially contains the fat freed of sterols, whereas the sterols are dissolved in the alcohol-rich phase. This method is preferably carried out continuously as countercurrent extraction. <IMAGE> |
