PURPOSE:To obtain a high-melting gelatin maintaining the molecular compatibility in the phase, soluble easily at low temperature and giving a gel having increased melting point, by evaporating and drying a mixed solution of gelatin and agar without passing through a gel state. CONSTITUTION:Gelatin is swollen with water and dissolved at 50-60 deg.C. Separately, agar is swollen with water and boiled. The agar solution is added to the gelatin solution under agitation, and the mixture is dried at 60 deg.C with a drum drier heated with steam of 1.2 kg/cm<2> pressure. The dried product is pulverized to obtain the objective high-melting gelatin. The amount of agar is 0.1-99 (wt)%, preferably 0.5-50% based on the gelatin. The product is soluble at low temperature and the gel produced therefrom has higher melting point than that of gelatin used as the raw material. |
