PURPOSE:To enable customers to see a process for preparing 'CHIKUWA' (bamboo-shaped, broiled fish-paste cake), by heating and broiling ground fish meat wound around each skewer on the downstream side and removing the resultant 'CHIKUWA' from the skewer. CONSTITUTION:Ground fish meat (S) for 'CHIKUWA' is passed through a feeder 52 and a pipe 50, extruded through a nozzle 54 to a prescribed width, thickness and length, cut off by a cutter 56, then received by an upper semicircular peripheral surface part 58' of a rotating drum 58 and wound around each skewer 16 transferred while being rotated on a lower curved part of a conveying passage 14. The skewer 16 is subsequently transferred to the upper curved part of the conveying passage 14, introduced into a heater 22 and heated to the interior of the ground fish meat (S) by far infrared elements 70 set at a prescribed interval. The peripheral surface thereof is simultaneously and suitably scorched and transferred to a 'CHIKUWA' removing device 24. Both ends of the 'CHIKUWA' are nipped by a rectangular removing member 80 and semicircular removing member 81 and the 'CHIKUWA' is pushed forward by an U-shaped member 83 in the deep end of the member 80 to remove the skewer 16. The resultant 'CHIKUWA' is passed through a chute 102 and discharged to the outside. The skewer 16 is then cooled with water brushes 110 of coolers 26 and subsequently fed to the lower curved part of the conveying passage 14. |
