The machine has a rotating disc cutter (4) and a feed tunnel (14) for the foodstuff (16). Near the tunnel mouth is an opening (11) for a safety shutter (3) which, when a new piece is to be placed in the tunnel, is raised to prevent access of the hand to the cutter. The holding down strip (1) is pivoted at one end (2, 23) between a pair of cheekplates (6) rotatably mounted on the drive shaft (5). Fixed on the drive shaft between the cheekplates is a pinion segment (7) in mesh with a toothed segment of the pivot bearing block (2) of the holding down strip. USE/ADVANTAGE - Allows optimal support of foodstuff without obstruction of safety shutter.
