PURPOSE:To obtain the subject composition, capable of simultaneously improving the operating efficiency with a machine while maintaining the good quality of a hand-wrought product, excellent in water holding ability and useful as noodles, etc., by partially replacing wheat flour with a specific partially pregelatinized starch. CONSTITUTION:The objective composition is obtained by partially replacing wheat flour with a specific pregelatinized starch substantially maintaining the outer shell thin membranous structure of raw starch grains in an amount of 1-30wt.% based on the total original wheat flour. |
