PURPOSE:To obtain a low-calorie sweetener effective in activating bifidus bacteria by fractionating a beet saccharide liquor using ion chromatography, then concentrating the resultant waste liquor containing raffinose, adding lactose thereto and reacting a beta-galactosyltransferase with the mixture. CONSTITUTION:A beet saccharide liquor of a factory adopting a desalting method is fractionated according to an ion chromatography and a waste liquor containing a large amount of raffinose after recovering sucrose is directly concentrated, or desalted and then concentrated. Lactose is subsequently added and a beta-galactosyltransferase is further added and made to react therewith at 40 deg.C for 15hr. The sucrose in the concentrated ion chromatographic waste liquor is converted into beta-galactosylsucrose. The obtained waste liquor is reconcentrated and allowed to cool. The depositing raffinose and the deposited substance of the beta-galactosylsucrose are separated and dried to afford the objective low-caloric functional sweetener containing a large amount of an undigestible oilgosaccharide, effective in activating bifidus bacteria which are useful enterobacteria. |
