PURPOSE:To prepare the titled food which is soluble in cold water and gels rapidly, by mixing water-soluble gelatin obtained by the microwave heat drying and the freeze pulverization of hydrated gelatin, with powdery fat obtained by drying and pulverizing (coated) oil or fat. CONSTITUTION:Powdery or flaky gelatin on the market is hydrated uniformly by mixing with about 40wt% of water. The uniform water-absorption can be carried out easily by cooling the gelatin and adding a small amount of starch to the system. The hydrated gelatin is put into a vessel and heated in a microwave oven. The gelatin is molten upon heating, and foamed and dried to obtain a solidified product containing a large amount of bubbles. The heating should be completed within 1- 10 minutes. The solidified gelatin is cooled to -50--60 deg.C and pulverized with a freeze pulverizer. The powder thus prepared contains >=90% of fine component which passes through a 200 mesh sieve. The objective desert powder is obtained by mixing the above powder, with yogurt powder, cheese powder, sugar powder, etc. |
