PURPOSE:To obtain the subject enzyme having alcohol resistance, digesting a protein containing ethanol as a preservative by culturing a specific bacterium belonging to the genus Bacillus having protease activity in a medium, and collecting the protease from the culture mixture. CONSTITUTION:A bacterium belonging to the genus Bacillus having protease activity and stability at pH3.0-6.0 in the presence of 20% ethyl alcohol, capable of producing a protease having 75,000 molecular weight and about 3.6 isoelectric point is cultured in the medium and the protease is collected from the culture mixture to give the objective alcohol-resistance protease. |
