PURPOSE: To obtain a frozen pasta of an excellent texture having desired hardness by pre-heating dough molded in a pasta shape, partially drying it, mixing it with both of sauce and water or the like and freezing it. CONSTITUTION: The dough molded in the pasta shape or dehydrated pasta is heated by the water higher than 97 deg.C and pre-heated to the moisture content of 60-70%, the pre-heated pasta is processed for 1-15 minutes at the temperature of 120-185 deg.C, partially dried to the moisture content of 40-60%, mixed with both of the sauce and the water or with only the water and then frozen and the target frozen pasta is obtained. |
