<p>To determine, with an adequate reliability the firmness or "body" of an ice cream mixture being churned in a batch-freezer, a thermostatic probe (13) radially extends from the dasher shaft (11) so that the probe senses the temperature of the mixture continuously during rotation and in a portion of the mixture which is far from environmental influences. Electric lines (14, 17) connect the probe to the freezing unit (20) to control it and to a display (18) for temperature readouts. <IMAGE></p> |
