摘要 PURPOSE:The use of vegetables as an ingredient of ''sushi'' gives said ''Edo-style'' sushi that is inexpensive and freshly tasty and can be stored. CONSTITUTION:As an ingredient of ''sushi'' is used seasoned 'nameko' (edible fungus of the family Strophariaceae), mushroom, kideny beans, cauliflower, broccoli, 'zenmai' (Osmund), 'menma' (an aspidium), green pepper, edible fungi, asparagus, soybean curd cake, okra, pickles of vegetables and others. The ingredient 3 is placed on boiled rice 1 and they are rolled in laver sheet 2 or only rice is rolled in laver sheet 2. Or the ingredient is covered with rice as the core and the rice is rolled in laver sheet or the rice and the ingredient are piled alternatively and they are pressed.
