PURPOSE:To enable the quick thawing of frozen meat, and to obtain delicious cooked meat completely without losing the nutrient components of the meat, by heating and thawing the frozen meat in a thick-walled flat-bottomed iron-pan preheated its bottom, and successively, roasting and cooking the thawed meat in the covered pan. CONSTITUTION:The bottom of a thick-walled flat-bottomed iron-pan is preheated. A piece of frozen meat is unpacked, placed into the pan, and covered with a thick-walled cover. It is thawed, and successively roasted in the covered pan. After roasting, it is cooked in the pan or out of the pan. The iron pan is pref. at least 4-6mm. in thickness, and larger than 20cm in bottom diameter. The level of the cover of the pan is equal to or somewhat higher than the rim of the pan. Since the extract, juice, flavor, etc. of meat exudated in the course of thawing, are kept in the pan, the roast meat thus prepared has the delicious taste inherent to the meat, and keeps the nutrient components of the meat. |
