PURPOSE:To store a raw rice flour with a retained moisture content without degrading the quality thereof, by adding a specific moisture activity reducing agent to a raw rice flour and drying the resultant mixture at ordinary temperature or below or drying the raw rice flour at ordinary temperature or below, and adding the moisture activity reducing agent thereto to reduce the moisture activity value to a specific value or below. CONSTITUTION:A raw rice flour obtained by pulverizing rice grains is mixed with a moisture activity reducing agent, e.g. sugaralcohol, hydrolyzed reducing starch or saccharide, and the resultant flour mixture is dried by the natural drying at ordinary temperature, vacuum or freeze-drying at ordinary lower temperature, etc. to give a moisture content of 15-30% and a moisture activity value <=0.80. The dried mixture is then enclosed in a packaging bag. Alternatively, the raw rice flour may be dried, and the moisture activity reducing agent may be added thereto. |
