The present invention relates to a method and to a machine for cutting using multiple water jets operating at medium pressure, intended to produce individual bread rolls of any size, achieved by cutting, before baking, of baguettes of bread placed in their standard baking support meshes. The machine comprises a cutting boom 1 equipped with several nozzles 2 which can be addressed in groups, a device for relative displacement of the boom with respect to the baguette-support meshes 7, a system for drying the bread rolls after cutting 8, a medium-pressure generator 9, management of the mechanical, hydraulic and electric inputs/outputs. *Application: industrial bakeries and large cottage industries. <IMAGE>
