NEW PROTEASE

摘要

PURPOSE:To obtain a new protease having a raised specific activity in casein hydrolytic activity. CONSTITUTION:A protease in which aspartic acid group at the 213rd position from the amino terminal of a thermoduric neutral protease having an amino acid sequence expressed by the formula is substituted with other amino acid residues (e.g. arginine, lysine, histidine or asparagine). This protease can be obtained by modifying a thermolysin-like metallic protease derived from Bacillus stearothermophilus using a technique of protein engineering.
