Method for producing laminated meat, comprising the pressing of previously refrigerated lumps into blocks, the guided supply of meat blocks along a predetermined axis and the slicing thereof into ultrafine slices by means of at least one rotary disk actuated in circular translation through the block in a plane perpendicular to said axis, integrally with a circular rotating platen, characterized in that said platen (73) is situated in a plane parallel to said plane of disks (71-72) and at a distance therefrom which is sufficient so that the front face of the block is not supported by the platen, so that the latter is continuously rotating about its axis and drives the disk or disks in a circular continuous translation about said axis, and so that the feed motion of the block caused by the supply means is controlled to define the thickness of the slices or layers.
