The present invention relates to a process for the manufacture of organic acids, of the type consisting in continuously feeding a culture medium, previously inoculated, with nutritive substrates, with neutralising agent intended to maintain the pH of the culture medium constant, and carrying out on the fermentation broth a continuous operation of tangential filtration for recovering the salt of the organic acid formed with recycling of the microorganisms in the fermenter, characterised in that the biomass is continuously purged so as to maintain the population of microorganisms present in the fermenter at an essentially constant average age.
