摘要 <p>The invention relates to a sugar hail suitable for the preparation of foodstuffs while maintaining the appearance of sugar hail which has a dissolution time greater than 12 minutes, a minimum crushing strength of 4 bar and a crystalline appearance and preferably a maximum ICUMSA coloration of 20. It can be obtained by compacting the sugar having a water content between 2 and 4.5 % to obtain a density between 1.29 and 1.50 g.cm&lt;3&gt; and maturing the sugar having a water content of 0.75 to 2 %.</p>
